Incredible one-pot campsite recipe | Huddo Jack shares his Chicken n Chorizo Risotto | Bush Tele


Tonight I’m going to do some
cooking on one of my favourite bits of equipment:
the camp oven. So we’re gonna do a bit of a
risotto. Chicken and chorizo in there. So we’ve got the capsicum to go,
got the mushrooms, got some cherry tomoatoes,
and the chicken and chorizo. Pretty soon we’ll take the
chorizo out and then we’ll chuck the
chicken in. Take our time cooking those
right through to the bone because when we put the rice
in later we just want to worry about cooking rice. A lot of the flavour is
going to be in those caramalised chicken and
chorizo that’s all at the bottom of the pan there. So when we add the oil,
the garlic and the onion we really wanna get all that
caramalised stuff off the bottom. We’ve gotta keep adding
stock as we go along and the rice will continue
to absorb the stock. At the same time we’ve got
all these other ingredients we wanna get in there and
get cooked as well. And I just wanna keep adding
a little bit more moisture. It just needs a little more,
so I’ve got some warm water just to keep the liquid up
to it now. Make sure that rice is
gonna cook through. But it is also time to add back
the chicken and the chorizo. Plenty of heat in this cast iron
now just to leave it like that. That’ll do it…. voila!
